I am soooo shocked at how delicious this came out! Not that I didn’t have faith in my culinary skills – after all, I’ve been cooking for a whole 5 years now! 😉
Maybe I’m surprised because this was by far the easiest soup I’ve made and it was one of the most delicious! It’s that time of year that tomatoes are busting out in gardens and markets all over so what a great way to use a bunch of them all at once! My Mom also grows a ton of them in her garden so this soup was made with the latest batch from Mom! Making soup is a great way to get some of these super foods into your diet! I LOVE tomatoes so I literally keep a bowl like this out and grab a cherry tomato as I walk by. If you don’t have the same enthusiasm, make a soup! It’s all fresh ingredients, no added junk and soooo good for you! Tomatoes are on that list of the top super nutrient foods!
I’m also all happy and proud of myself because I made this soup in my NUTRIBULLET! Yep, that’s right! I simply put all the ingredients inside and pulsed it to the consistency I liked – which I decided that I like it with a hint of chunkiness to it – or you can easily turn this into a creamy soup too!
So here’s how I made mine:
all the tomatoes you see in the pic (they took up a whole cookie sheet)
3 shallot cloves
1 clove of garlic
5 fresh basil leaves
salt and pepper to taste
Roast the tomatoes in the oven with a little EVOO and salt until the start to split and pop and while they’re roasting, (about 10 min) chop all of your other ingredients. Then add everything to your blender of choice. Obviously a blender or vitamin or food processor works well, but if you’re like me and don’t have any of the above – do what I did and use a NUTRIBULLET! It was sooo easy and was done in about 15 seconds!
Here is the finished product! I left mine a bit chunky and flavored with pepper and some freshly grated Parmesan cheese – I tried to pretend I was Giada as I was sprinkling the cheese grater over my bowl. I’ll just stay with that fantasy… haha.
But seriously, I highly suggest purchasing parmesan cheese as a brick and then shredding it as you need it! It tastes sooooo much better and is way cheaper! I also realized that if you buy cheese (any cheese) pre-packaged, the ingredient list gets little scary! So keep it simple and fresh and yummy too!
